Halloween Candy Corn Fruit Parfaits

candy corn fruit parfaits I love candy corn, that quintessential fall candy. Wouldn't it be great if it was actually good for you? My kids and I made these cute "candy-corn" style fruit parfaits, with layers of yellow pineapple, orange mandarin slices, and white whipped cream. They're perfect as a sweet but healthy treat for a Halloween party or autumn snack.

You can use either fresh or canned fruit. We tried making these with both fresh mandarins and canned mandarin oranges, and the kids like the sweeter and more tender canned version better. You can also substitute thick vanilla Greek yogurt for the whipped cream.

If you're making them for a Halloween party, assemble the fruit in advance in containers (we used 8-ounce mason jars) and refrigerate, then add the whipped cream or yogurt just before serving.

Ingredients

Makes one parfait

  • 1/3 cup chopped fresh pineapple or canned crushed pineapple
  • 1/3 cup fresh or canned mandarin orange segments
  • Sweetened whipped cream or vanilla Greek yogurt
  • Candy corn for ganish (optional)

Directions

In a glass cup or or container (8-ounce mason jars are perfect; get them at most grocery or hardware stores or even Target), arrange a layer of pineapple. Add a layer or mandarin orange slices. You'll want about 1/3 cup of each; make sure each layer is even.

Top with sweetened whipped cream or yogurt and garnish with a candy corn, if desired. Using a glass container is important so you can see the colors through the sides—the finished product should look like a a candy corn with even layers of yellow, orange, white. Repeat as desired to make more parfaits.
