Cooking with Your Kids: Macadamia Cod with Nectarine Salsa

Here's another fun and easy recipe to make with your kids from What's Cooking's Michelle Stern. Macadamia Cod with Nectarine Salsa
   
4 nectarines (small and ripe), pitted and diced  
1/2 cup red bell pepper, finely diced  
4 Tbs scallions, thinly sliced  
4 Tbs limejuice  
1 jalapeno pepper (ribs and seeds removed), finely chopped  
1/2 tsp salt  
4 cod fillets, 6 ounces each  
1/2 cup macadamia nuts  
1/2 tsp paprika  
 
1 Preheat oven to 400.
2 For salsa, combine nectarines, bell pepper, scallions, limej uice, jalapeno pepper, and salt in a small bowl; mix well.
3 For cod fillets, chop macadamia nuts using Food Chopper.
4 Combine nuts and paprika in small bowl, and then mix well.
5 Arrange fillets on oven-safe cooking pan.
6 Carefully sprinkle nut mixture over tops of fillets, forming and even layer.
7 Bake 12-15 minutes, or until cod flakes easily with a fork. Remove fillets from oven; serve with salsa.
 
Servings: 4
  
CALL THE KIDS:
Slice nectarines into pieces.
Juice lime.
Mix salsa ingredients.
Chop nuts with the Food Chopper
