deconstructed cheeseburger salad When things get busy, especially at the start of a new school year, I place an order to Pernilla's Pantry, a mom-run business here in Marin that offers creative healthy meals for busy families. When your order arrives, you'll receive recipe cards and all the ingredients that you need to make three or four fantastic family meals for the week.

Pernilla's Pantry was created by Pernilla Sumner, a Marin mom and Swedish native who loves to share her passion for food and good cooking with others. Pernilla shared one of her most popular recipes with us: Deconstructed Cheeseburger Salad.

Ingredients

Salad

  • 1 pound ground beef
  • 1 red onion
  • 2 romaine lettuce heads
  • 3 tomatoes
  • Grated cheese
  • Salt and pepper
  • Olive oil

Dressing

  • 1/3 cup soy sauce
  • 1/4 teaspoon mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons water

Directions

  1. Shape ground beef into 4 patties, season with salt and pepper. Heat oil in a large skillet over medium-high heat. Cook patties until done, 4–5 minutes per side.
  2. Cut red onion into 1/4-inch thick slices. Heat oil over medium-high heat in second skillet. Add onions to skillet and cook 5 minutes per side.
  3. Slide 2 heads of romaine lettuce, chop 3 tomatoes, cut burgers into bite-size pieces, and separate onions into rings.
  4. On 4 plates divide lettuce, burger bites, onion rings, tomatoes, and cheese. Give dressing a stir then drizzle over salads and serve.
