A Family that Eats Together: Apricot Glazed Chicken with Dried Plums and Sage

Nicole's meal plan for this week features hunter's stew with roasted rosemary potatoes, shrimp scampi with linguini, tomato and red pepper soup, tagliatelle with asparagus and pancetta, and this apricot glazed chicken with dried plums and sage.

I used to make this recipe all the time before my husband and I were married. It was the perfect quick and easy recipe after a long day at work. So, I went back into my archives to find it for something new again at dinnertime. It is a showstopper with little effort needed. The sweetness of the chicken and sauce is perfect for little ones. My son didn’t even know he was eating prunes and kept asking for more. I serve this with Israeli couscous but rice or potatoes with would be great too. Recipe by David Lieberman

Ingredients

  • 1 roasting chicken, cut into pieces
  • 1 (12-ounce) jar apricot preserves
  • 15 medium dried plums (aka prunes), pitted
  • 1/3 cup olive oil
  • 1 tablespoon white vinegar
  • 3 pinches salt
  • 2 tsp black pepper
  • 5 cloves garlic, peeled
  • 20 sage leaves

Directions

  1. Preheat oven to 400ºF.
  2. Place chicken in a roasting pan.
  3. Toss all of the ingredients together with the chicken until the chicken is evenly coated with the sauce. Arrange the chicken pieces skin-side up in the pan, spaced evenly apart.
  4. Roast, uncovered, until the tops of the chicken pieces are browned and the chicken is cooked through, and the juices run clear, about 35 to 40 minutes.
