A Family that Eats Together: Sweet and Tangy Chili Beef

Spicy chili beefMarin Mommies is happy to present this week's guest recipe from Nicole Cibellis, Marin mom and author of the blog A Family that Eats Together, where she shares meal plans and recipes that will please foodies and children alike. Nicole is also the creator of the new Little Froglet line of children's activewear.

Nicole's meal plan for this week includes smokey tomato bacon soup and grilled cheese, quick and easy baked chicken parmesan with roasted broccoli and pasta, carne asada tacos with salsa borracha (drunkem salsa), spaghetti bolognese, and this sweet and tangy chili beef, complete with a less spicy portion for the kids.

Ingedients

Sweet and Tangy Dressing

  • 1 tablespoon light soy sauce
  • 4 tablespoons lemon juice
  • 2 tablespoons orange juice
  • 1 teaspoon peanut oil
  • 2 teaspoons sugar
  • 1 tablespoon honey
  • 1/3 cucumber, halved lengthwise, seeded and very finely chopped
  • 1/2 teaspoon Spicy Chili Crisp (available at Asian markets)

Chile Beef

  • 1 tablespoon peanut oil
  • 9 ounces beef fillet (tenderloin), sliced into thin 1/4-inch strips (Cook's note: You could use tail end of fillet for a less expensive cut).
  • 1 teaspoon Shaohsing rice wine or dry sherry
  • Spicy Chili Crisp
  • 1 teaspoon light soy sauce
  • Pinch freshly cracked white pepper
  • 1 large handful baby spinach leaves, washed
  • 2 heads green-stemmed bok choy, washed and sliced

Directions

For the dressing: To make the sweet and sour dressing: Combine the light soy sauce, lemon juice, orange juice, oil, sugar, and honey, in a bowl. Whisk to blend the ingredients, and then add the very finely chopped cucumber. Stir, and set aside.

For the beef: Heat a wok over high heat, and add the oil. Add the beef to the hot wok, and stir quickly. Deglaze with the rice wine or sherry, and soy sauce. Cook for a few seconds. Remove the kids' portions now.

To proceed with the adults meal: Add the Spicy Chili Crisp and white pepper. Add Boy Choy and Spinach. Cook for a few minutes until almost wilted. Serve with dressing and rice.
