A Family That Eats Together: Grilled Hanger Steak Lettuce Cups with Peanut Sauce

This recipe is finger licking good. With no carbs, it packs a punch with standout flavors in a neat package. I used the vegetables I had on hand for the lettuce cups, but you can use what you happen to have. For the steak, I used the the hanger cut which is juicy and intensely flavorful, but a flank steak would work just as well. If you wanted it to be vegetarian, you could also substitute baked tofu.

Ingredients

  • 1 ¼ pound hanger steak
  • 10–12 Boston lettuce leaves
  • ½ of a cucumber chopped
  • ½ of a white onion, thinly sliced on the half moon shape
  • ½ pint cherry tomatoes, sliced in half

for the peanut sauce

  • ¼ cup light soy sauce
  • 1 tablespoon tamari soy sauce, (found in the grocery store next to the soy sauce)
  • ¼ cup peanut butter; cashew butter is a good substitute
  • 2 tablespoons seasoned rice wine vinegar
  • 2 tablespoons light brown Sugar
  • 2 scallions (white and green parts), finely chopped
  • ½ cup water
  • ½ tablespoon red pepper flakes (can be omitted)

Directions

  1. Combine in a food processor or blender soy sauce, tamari, peanut or cashew butter, rice wine vinegar, light brown sugar, scallions, 1/3 cup water and puree until smooth. Take out the portion for your kids and set aside. Add the red pepper flakes to the food processor or blender and puree or a second more.
  2. Heat the grill to high heat. Season the steak with salt and pepper, to taste. Grill until medium rare or to your liking. Remove the steaks from the grill and let rest until you are ready to assemble the lettuce cups. Then chop into ¼-inch pieces.
  3. To assemble the lettuce cups, layer the onion, cucumber, tomatoes and steak on the lettuce. Drizzle the peanut sauce over the top. For the kids, I plate the veggies and steak on a dish and provide a small cup of sauce for dipping.
