A Family That Eats Together: One Pot Chicken with Kale and Couscous

One-pot meals are perfect any time of year. This one pot meal is nutritious, tasty and quick to make with only seven ingredients. Whether you are looking to eat a more healthy diet, get the kids to eat their veggies or just simply want something quick and easy to cook, this dish can’t be beat!

Ingredients

  • 2 garlic cloves, minces
  • 2 large shallots, finely chopped
  • 4 boneless, skinless chicken thighs, cubed
  • 2 cups Israeli couscous
  • 2 cups frozen chopped kale
  • 2 cups chicken stock
  • 1 tablespoon fresh lemon juice
  • olive oil
  • salt
  • pepper
  • grated parmesan cheese (optional)

Directions

  1. Heat 2 tablespoons of oil in a large Dutch oven or covered pot over medium–high heat. Toss the chicken with salt and pepper to your taste and place the chicken in the pot to brown. When the chicken in almost browned, add the garlic and shallots, sautéing them until softened. Stir in the couscous, kale and stock. Bring the pot to a low simmer and then turn the heat down to low. Cover the pot and let it simmer for 10 minutes or until couscous is cooked and tender. Pull the pot of the heat and gently stir the lemon juice in.
  2. Plate the dish and garnish with parmesan cheese if you would like to use it.
