A Family that Eats Together: Baked Ginger Chicken

Nicole's meal plan for this week features Guiness and onion soup with Irish cheddar crouton, spaghetti con pomodorini e pecorino, Thai beef with noodles, spiced ground turkey in lettuce cups, and this easy and tasty baked ginger chicken.

This recipe is great for a weeknight dinner. You can get it prepared and then let it cook while you get settled for dinner. The ginger with the roasted vegetables is so sweet. My son couldn’t get enough of the caramelized carrots. This meal was a hit with the whole family! Recipe inspired by Ming Tsai.

Cook time: 50 minutes

Ingredients

  • 4 chicken thighs, bone-in and skin-on, salted and peppered, to taste
  • 2 carrots, chopped
  • 1 large onion, sliced
  • 2 tbsp of fresh minced ginger
  • 2 tbsp extra virgin olive oil

Directions

  1. Preheat the oven to 450º.
  2. In an ovenproof pot or pan heat the oil on medium. When it is hot, add the chicken skin side down. Brown the skin and turn once. About 8–10 minutes on the skin side and 4 minutes on the other side. Remove from pan and set aside.
  3. In the same pan, on high heat, add the carrots and onions. Sauté for about 10 minutes or until the vegetables are softened. Add ginger and mix thoroughly
  4. Add back the chicken and place in the oven, uncovered for 40 minutes.
