A Family that Eats Together: Tortilla Soup

Nicole's meal plan for this week features roast chicken and vegetables, grilled filet mignon with caramelized shallot popovers and green beans, cumin crusted chicken with cotija and mango-garlic sauce, quick and easy farfalle with tomatoes and pancetta, and this simple and tasty tortilla soup.

Cook time: 40 minutes

Ingredients

  • 48 ounces chicken or turkey stock
  • 4 plum tomatoes, chopped
  • 1 large yellow onion, diced
  • 1 canned chipotle pepper in adobo, chopped
  • 4 teaspoons tomato paste
  • 2 garlic cloves, minced
  • 1-1/2 cups shredded chicken or turkey
  • 1 avocado, sliced
  • 1/2 cup jack cheese, shredded
  • 1 lime, juiced
  • Tortilla chips
  • 1/2 cup fresh cilantro, for garish
  • 2 tbsp extra virgin olive oil

Directions

  1. In a stock pot, heat oil. Add onions, garlic, tomatoes and chipotle pepper. Cook down for about 20 minutes. Add stock, season with salt and pepper. Simmer for 20 minutes. Pull off heat and add lime juice.
  2. Ladle soup in to bowls, garnish with avocado, cheese, tortilla chips and cilantro.
