A Family That Eats Together: Grilled Rosemary, Lemon and Dijon Chicken Thighs

This is an easy summer grilling recipe for chicken done right in a matter of minutes. With a little prep work early in the day or the night before, you can toss this dinner on the grill and have it on the table in no time. We prefer boneless, skinless chicken thighs but this would work on breasts or with the skin on if you prefer.

Prep time: 5 minutes
Inactive time: 2–24 hours
Cook time: 15 minutes

Ingredients

  • 2 tablespoons fresh rosemary
  • 3 lemons, zested and juiced + 1 lemon cut in half
  • ¾ cup Dijon mustard
  • 8 boneless, skinless chicken thighs
  • salt
  • pepper

Directions

  1. Combine the rosemary, lemon zest, lemon juice and Dijon in a locking plastic bag or bowl. Add chicken making sure to cover the chicken in the mixture. Let sit and marinade for 2 hours or up to overnight.
  2. Pre-heat grill to medium heat. Season the chicken with salt and pepper to your taste. Place the chicken and the extra lemon (cut side down) on the grill. Cook for approximately 8 minutes per side depending on your grill. Chicken will be done when the inside is opaque and cooked through.
  3. Serve with brown rice and your favorite vegetable side.
