A Family That Eats Together: Shaking Beef

Charles Phan of the Slanted Door made Shaking Beef famous. Its succulent sauce, a perfect salty/sweet combination, is tossed with filet mignon. It might be one of my all time favorite dishes to eat at his restaurant and to make at home. You won’t believe how simple it is to make and your family will go crazy for it! Serve with rice.

Ingredients

  • 1½ pounds filet mignon or top sirloin, chopped into 1 inch cubes
  • 3 ½ tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons soy sauce
  • 3 tablespoons fish sauce
  • 2 tablespoons white vinegar
  • 1 teaspoon rice wine
  • 6 scallions, chopped
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 tablespoon unsalted butter
  • watercress
  • lime wedges

Directions

  1. Toss the steak with 1 tablespoon sugar, salt and pepper.
  2. Heat a wok or large skillet over high heat. Add the beef and sauté until almost done (approx. 5-7 minutes). Add the scallions, onion and garlic, sautéing them for an additional 3–5 minutes. Pour in the soy sauce, fish sauce, vinegar and rice wine. Stir in the remainder of the sugar and simmer for 3 minutes.
  3. Plate over the watercress and serve with lime.
