Denise has been cooking professionally for over eight years. Her experience spans from working alongside talented chefs in Bay Area restaurants, inlcuding La Note, A Cote, and Rose Pistola, as well as being a recipe tester and food stylist for the cookbook Thinkfood: Recipes for Brain Fitness. The recipe she contributed, Stuffed Artichoke with Gremolata and Greek Yogurt Dipping Sauce, earned her great reviews.

Incorporating fresh, local, and seasonal organic ingredients into her recipes comes easy to this chef whose passion for cooking came from her childhood on her grandparents' ranch in Marin. Memories of filling an empty coffee can with freshly picked blackberries and turning them into cobbler and artichokes for a side dish influence how she cooks today. Selecting the freshest locally grown organic ingredients, Denise enjoys putting her own twist on Italian dishes, including her artisanal pizzas, lemon risotto with peas and pancetta, herbed pork tenderloin with sun-dried tomato jam or lasagna rolls.

We had the opportunity to try some of Denise's cooking, in the form of her lasagna rolls, recently. Instead of layering the ingredients as in a traditional lasagna, Denise rolls the noodles around a filling of ricotta, fresh spinach, and chopped prosciutto. The rolls are then covered in sauce and mozarella cheese and baked. We all agreed they were fantastic! The earthy flavor of the spinach worked well with the savory, salty prosciutto, and the chunky homemade tomato sauce tied it all together. Our kids (ages 5 and 7) both loved them, too, and cleaned their plates, which is the ultimate compliment in our house. This is a dish we'd be happy to come home to any night of the week.
