Blueberry Oatmeal Breakfast Muffins

I'm always looking for ideas for heatlhy breakfast treats for my kids. These easy to make muffins are great when you don't have a lot of time for breakfast but need something to give you some energy to start the day. They're kind of like a cross between a muffin and a breakfast bar, and are chewy and hearty and gluten free since all they contain are oats, brown sugar, milk, and fruit.

Ingredients

  • 3 cups old-fashioned rolled oats
  • 1/2 cup dark brown sugar
  • 2 tsp baking powder
  • 1 cup milk
  • 2 large ripe bananas
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup blueberries, fresh or frozen

Directions

Preheat the oven to 375°F. Line a 12-cup muffin tin with paper or foil liners.

In a medium bowl, whisk together oats, brown sugar, and baking powder. Mix until they're thoroughly combined.

In a large bowl, mash the bananas until smooth. Add milk, eggs, and vanilla extract and whisk well to combine. Pour the dry ingredients into the wet ingredients and stir. Let it sit for 10 mintues, then fold in the blueberries.

Spoon batter into the muffin cups. Bake for 25 to 30 minutes. The muffins should be golden brown on top but chewy inside.
