Cooking with Kids: Healthy Roll-up Sandwiches

Roll-up turkey sandwichesIt's no secret that the best way to get kids to eat something is to have them help make it. The same goes for both the dinner table and the lunch box, where these healthy and delicious turkey roll-up sandwiches are a welcome break from standard school lunch fare, especially if the kids make them themselves. You can vary the ingredients according to your taste. These are great for mom and dad to take to work or eat at home for lunch as well.

Ingredients

  • Whole wheat lavash bread (or whole wheat tortillas)
  • Sliced roasted turkey from the deli
  • Light whipped cream cheese
  • Cucumber slices
  • Shredded carrots

Directions

Assemble the ingredients on the kitchen counter and let the kids assemble their own sandwiches. Spread a layer of cream cheese on about half the lavash, then layer with cucumber slices (we love the little tender Persian cucumbers stocked by Trader Joe's), slices of turkey and shredded carrots.

Roll the bread up starting with filling side to make a neat rolled-up sandwich. Mom or dad can slice in half on the diagonal for a neat looking presentation. For this sandwich, you can use whole wheat tortillas instead of the lavash, but the lavash is lighter and tastier and well worth seeking out. You should be able to find it at Trader Joe's or Whole Foods.

Other great ingredients include lettuce, sliced olives, and roasted red peppers. It all depends on your imagination and what your kids like, of course. For a delicious Middle Eastern-inspired version, try rolling up a version with hummus, cucumber slices, and lettuce leaves (it's vegan, too).
