Fried Tofu with Ginger Sesame Sauce and Summer Rolls

Nicole's meal plan for this week spiced turkey with hummus, tomato salad, spiced yogurt and pitas; cashew nut chicken and ginger fried rice; bucatini carbonara with tomatoes; sauteed chicken breasts with Dijon herb sauce; and this fried tofu with ginger sesame sauce and fresh vegetable-filled summer rolls..

Ingredients for tofu

  • 2-1/2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp spicy chili crisp (optional—click here for more information)
  • 1 large garlic clove, minced
  • 1/2 tbsp sesame seeds
  • 2 tbsp minced ginger
  • 1/2 tbsp sesame oil
  • 2 containers of extra firm tofu

Ingredients for summer rolls

  • 2 scallions, sliced
  • 1 avocado sliced
  • 4 inches of a cucumber, seeded, peeled and sliced
  • 1/2 of a red bell pepper, seeded and sliced
  • 2 oz of rice vermicelli (found in Asian supermarkets)
  • Mint leaves
  • Cilantro leaves
  • 5-inch round rice paper wrappers (found on the Asian aisle of supermarkets)

Directions

Slice the tofu in thirds and let drain on paper towels.

Cook the vermicelli per the package instructions. Wet each paper wrapper with hot water to soften. Lay it down on the board and place a little vermicelli on one end, add 2 slices of cucumber, 1 slice of red pepper, 1 slice of avocado, 2 mint leaves and a little cilantro on top. Roll the wrapper over the items and tuck in the sides while rolling the wrapper up like a burrito. Do this with as many summer rolls you wish to make.

In a sauté pan add enough oil to cover the bottom of the pan. Heat until almost smoking. Add tofu and cook until brown on both sides. Place on paper towels to drain excess oil.

While the tofu is cooking, in a small bowl whisk soy sauce, sugar, spicy chili crisp (if using), garlic, sesame oil, sesame seeds and ginger.

Drizzle sauce over tofu and summer rolls or leave the sauce on the side so the kids can dip the rolls and tofu into it.

Serve with steamed rice.
