A Family That Eats Together: Lamb Chops with Haricot Verts

My mom has made lamb chops for our family since the beginning. At the age of one, my one would power through 6 at one sitting because they are so good. In looking at ways to eat healthier and with fewer carbs, I wanted to find meals that were satisfying. In this dish, I simply broil lamb chops and add my favorite French green beans called haricot verts. By cooking them with a little garlic and lemon zest, they make the basic green bean crunchy and amazing. I served with rice and a side salad.

Ingredients

for the lamb

  • 8 lamb loin chops, trimmed of excess fat
  • ½ teaspoon garlic powder
  • ½ teaspoon seasoned salt
  • ½ teaspoon seasoned pepper
  • 1 teaspoon dill

for the haricot verts

  • 4 cups haricot verts, ends trimmed
  • 2 garlic cloves, minced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon zest
  • pinch of sea salt

Directions

  1. Preheat broiler to high. Line a baking sheet with tinfoil and place a cookie rack over top.
  2. Place the lamb on the rack and season both sides with: garlic powder, seasoned salt, seasoned pepper and dill. Place lamb in the oven and broil for approximately 7 minutes per side, turning half way through for medium rare or to your liking.
  3. While the lamb is cooking, place beans and a pinch of salt in a shallow pan filled with enough water to cover the beans. Simmer the beans for approximately 4-5 minutes or until almost cooked but still firm. Drain water and place pan back on high heat. Add garlic and sauté for 1 minute. Turn off heat and add lemon zest, stirring to coat the beans.
  4. Serve lamb with beans. Add rice and a side salad to complete the meal.
