Family That Eats Together: Gnocchi with Italian Sausage, Kale, and Chanterelle Mushrooms

I am always looking for ways to integrate kale into my son’s diet. Usually when he sees it, he rejects it. Last month my husband I were at a restaurant and they served this kind of dish which we fell in love with. I have been trying to recreate it ever since and now I think I have finally got it down. When my son sat down at the dinner table I told him the gnocchi was the same thing as ravioli and that he would like it (ravioli is one of his favorites). Since it has sausage it wasn't a hard sell on him. It was only after he polished his plate that I told him he ate kale and chanterelle mushrooms. He looked at me with amazement and said that it was delicious! I think I am on to something here…

Ingredients

  • 2 packages of frozen gnocchi (any type you like is fine)
  • 1 pound Italian sausage, bulk or removed from casings
  • 2 medium shallots, sliced
  • 4 chanterelle mushrooms, cleaned and sliced
  • 2 cups fresh kale or 1 cup frozen
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1/3 cup chicken broth
  • 1 tablespoon honey
  • Parmesan cheese

Directions

  1. Bring the water for the gnocchi to a boil.
  2. Heat a heavy skillet over medium heat. Add the oil. When it starts to shimmer, add the sausage and cook it until it is about to start browning. Add shallots and cook until they are lightly brown and the sausage is browned. Stir in mushrooms and sauté for 2 minutes. Stir in the kale and sauté for another 2 minutes or until it is wilted and mixed in. Add vinegar and let it thicken for 1–2 minutes. Add chicken broth and honey. Season with salt and pepper to your taste. Let the mixture simmer for another 4 minutes.
  3. While the sauce is finishing, add the gnocchi to salted boiling water. When they float to the top they are ready—approximately 2–4 minutes.
  4. Drain gnocchi and add to the sauce. Gently mix the gnocchi into the sauce and serve with Parmesan cheese.

* If you are looking for a way to cut down on calories, portion out the sauce and eat it with a salad instead of the gnocchi.
