Holiday Cookies: Norwegian Brown Sugar Cookies

These buttery Norwegian cookies are a different take on the traditional sugar cookie, and are great for holiday baking or any time, really. Plus, they're really easy to make, so they're a fun recipe to make with the kids.

This recipe calls for ground cardamom, which is used in a lot of Scandinavian baked goods. If you don't happen to have any on hand, substitute half the amount of ground cloves. They taste great either way.

Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon ground cardamom
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 1 cup sliced almonds
  • White sugar for sprinkling

Directions

Preheat your oven to 375ºF. In the bowl of your stand mixer (a large mixing bowl), cream butter and brown sugar. Add egg and mix thoroughly. Add dry ingredients and mix well, then fold in the almonds.

Roll dough into small balls about the size of walnuts. Dip a fork into white sugar and press down on balls to flatten, leaving a little sugar on top of each one. Sprinkle with a bit more sugar if desired.

Bake for 8 to 10 minutes or until golden brown. Let cool on the baking sheet for a few minutes and then transfer to a wire rack. Makes about two dozen cookies.
