A Family That Eats Together: Tofu and Bok Choy Stir Fry

Are you looking for a simple vegetarian stir-fry your kids will love? This one, they will inhale! It has all the nutrition you want from veggies and tofu with a savory sauce that they will lap up. Serve this with your favorite brown rice!

Serves: 6

Ingredients

  • 2 containers of firm tofu, cubed
  • 2 heads of bok choy, chopped
  • 6 scallions, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon vegetable oil

for the sauce

  • 1/2 cup soy sauce
  • 1/4 cup dry sherry
  • 1 1/4 cup vegetable stock
  • 1 teaspoon corn starch

Directions

  1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper. Place the tofu on the liner so that the pieces are not touching each other. Place the pan in the oven for 30 minutes or until the tofu is light brown.
  2. Stir the soy sauce, sherry, stock and cornstarch in a bowl.
  3. When the tofu is ready, heat a wok or large sauté pan to high. Drizzle the oil into the hot pan and add the bok choy, scallions and garlic. Toss for 1 minute. Add the tofu and stir in the sauce. Bring to a low simmer.
  4. Serve the tofu and veggies over brown rice.
