Pernilla shared her recipe for this hearty butternut squash, sausage, and gnocchi skillet.

Ingredients

  • 1 1/2 lb. Sausage Bulk
  • 3 Cups Butternut Squash
  • 3 Cups Chicken Broth
  • 1 lb. Gnocchi
  • 1/4 Cup Parmesan Cheese
  • Salt and Pepper
  • Olive Oil
  • 4 Garlic Cloves
  • 1 Cup White Wine (optional)

Directions

Pre-heat oven to 475 degrees. Finely chop 4 garlic cloves.

Heat oil in a large skillet over medium-high heat. Add sausage, cook breaking up, 8 minutes. To skillet add squash, garlic, 1 cup of wine if using, 2 cups broth (3 cups if not using wine), salt, and pepper. Bring to a boil.

Transfer skillet to the oven, roast until squash is tender, about 12 minutes. Cook gnocchi according to packet.

Drain gnocchi and stir into skillet. Top with parmesan and serve.
