Greek Chicken

Here's another fun and easy recipe to make with your kids from What's Cooking's Michelle Stern. The simple topping for this chicken dish is fresh and delicious. And you won't believe how fast it is to prepare!

4 ounces feta cheese, crumbled
1/3 cup kalamata olives, pitted
1 pint cherry tomatoes, halved
1/2 cup mint, fresh
2 tablespoons olive oil
1 pounds chicken tenders
salt and pepper to taste
Heat a grill pan or a large saute pan over high heat.
Brush lightly with oil.
Season chicken lightly with salt and pepper. Cook 1-2 minutes per side, or until cooked through. If you don't move the chicken, it will develop a golden hue.
Transfer to a plate and cover with foil until time to serve.
To make the topping: Mix sliced tomatoes, feta cheese, mint, olives and oil in a medium bowl. Season with salt and pepper, to taste.
Top chicken with tomato mixture and serve.

Servings: 4

CALL THE KIDS:
Crumble feta cheese
Pull mint leaves from the stem
Measure olive oil
Sprinkle salt and pepper on chicken
Mix the topping and put on cooked chicken
