Ingredients

  • 2 sticks unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2 3/4 cup all-purpose flour
  • 1 1/2 teaspoons cream of tartar
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons cinnamon

Instructions

Preheat oven to 350ºF. Line two baking sheets with parchment paper.

In the bowl of your stand mixer, cream butter and 1 1/2 cups of sugar for until light and fluffy. Scrape down the sides of the bowl and add the eggs one at a time and then the vanilla.

In another large bowl, whisk together flour, cream of tartar, baking soda, and salt until thoroughly combined. Add flour mixture to wet ingredients bit by bit until just combined.

In a small bowl, stir together the remaining 1/4 cup sugar and cinnamon.

Roll dough into 1-inch round balls. Drop into the cinnamon-sugar mixture and roll to coat well. Place on prepared baking sheets, about 2 inches apart. Sprinkle on a little bit more of the cinnamon-sugar mixture to make sure they're completely coated.

Bake cookies for 8–10 minutes. Let cool for several minutes on baking sheet, then place on a wire rack until completely cooled.
